从语法上看应该是名词吧或者形容词。（做表语）
柯林斯字典里面有preserves的名词解释：

不过仍然很费解阿。竟然是一种吃的。同时也没有，形容词的解释。

剑桥上面的说法，

如果做kept in good condition解释的话应该是没有问题的，文意和逻辑上都说得通。

跟4楼的说一下，虽然preserve有保护区的意思：
preserve (SEPARATE PLACE) noun [C]
US FOR reserve (= an area of land kept in its natural state, especially for wild animals to live in to be protected)

就是保护区的意思了。
但是，我们不可以用very well 修饰名词。

preserve 做名词，意思是禁区。
句子的意思是：
在巴西，很多古老的森林区都是禁区。（禁止人为破坏，禁止人的到访。）
